Chocolate Peppermint Bombs

These chocolate peppermint bombs are super quick and easy to make, all it takes is 5 ingredients and less than 15 minutes. What's more is they are utterly delicious and will stop any afternoon chocolate craving in it's tracks! These minty bombs are dairy free, gluten free, vegan and paleo friendly.

Ingredients:

Chocolate layer:

1/2 cup Niulife coconut oil (melted)

1/2 cup cacao

3-4 Tbsp Niulife coconut sugar (can be substituted for a liquid sweetener such as Niulife coconut syrup or maple syrup if you'd prefer a smoother texture)

Peppermint filling:

1/2 cup Niulife coconut butter (melted)

1 Tsp peppermint extract

Method:

Line a mini muffin pan with mini cupcake liners. Mix together all the ingredients for the chocolate layer, tasting and adjusting to your desired sweetness. Add a small amount of the chocolate mixture into each cupcake liner, using about half of the mixture in total for the bottom layer. Save the other half for the top layer. Place the muffin pan in the fridge and allow to set for approximately 10 minutes. 

Meanwhile, mix together the coconut butter and peppermint extract, stirring until it becomes a thicker paste. Add a small amount of this minty butter to each cupcake liner and pour the remaining chocolate mixture on top. Place back in the fridge to set and enjoy. Makes approximately 12 bombs.
