Coconut & Raspberry Bliss Balls

These yummy coconut and raspberry bliss balls are the perfect on-the-go snack and a great addition to kids lunchboxes too. They're quick to make, and high in fibre, antioxidants and all the good things that coconut has to offer! 

Prep Time 10 minutes

Servings 18 balls

Ingredients

1 cup rolled oats

1 cup cashews

1 1/2 cups Niulife Organic Desiccated Coconut

1/3 cup Niulife Organic Coconut Butter

1/4 cup Niulife Organic Coconut Syrup (or to taste)

1/2 cup frozen raspberries (thawed)

1/3 cup Niulife Organic Desiccated Coconut (for rolling)

Instructions

  1. Blend all the dry ingredients together in a food processor until finely chopped, stop blending before clumps start to form.
  2. Add the coconut butter, coconut syrup and thawed raspberries (drain any liquid away before adding the thawed raspberries as you don't want the mixture to be too wet). Blend until smooth.
  3. Roll into balls and coat with the remaining desiccated coconut.
  4. Enjoy!
