Coconut & Raw Beetroot Persian Freekah Salad

This deliciously healthy salad features our Niulife Organic Coconut Balsamic Vinegar that has been handmade from barrel-aged, fermented organic coconut blossom nectar blended with fresh tarragon leaves. 

INGREDIENTS

Handful of fresh rocket and baby spinach (chopped)
Handful of flat leaf parsley (chopped)
1 small raw beetroot (grated)
4 celery sticks sliced thinly
1 cup cooked Freekah (cracked green wheat)
2 cubes Persian feta or plain feta
Generous splash of Niulife Organic Coconut Balsamic Vinegar
Handful of Niulife Organic Coconut Flakes

METHOD

Cut and place all veggies into a bowl.
Add the freekah and mix together.
Crumble feta over top and add a splash of Niulife Organic Coconut Balsamic Vinegar.
Serve immediately or put into airtight container for a super healthy lunch idea!
