Banana Bread Brownies

I think we should call them Buttery Banana Bread Brownies! The texture is spot on, and without the dairy. These brownies are super easy and take hardly any time at all. Easy as your ABCs or should that be BBBs.  

Ingredients

3/4 cup all purpose gluten free flour

1/2 cup cacao powder

1 tsp baking powder

1 tsp sea salt

1 cup Niulife Coconut Sugar3 large eggs

2 tsp vanilla

3 very ripe bananas, use a fork to mash

1/2 cup Niulife Coconut Ghee

80 grams dark chocolate


Method

Preheat oven to 180 degrees C.

Grease a loaf tin with Niulife Virgin Coconut Oil  and set aside.

Combine all dry ingredients in a large mixing bowl. Create a well in the centre and add eggs, vanilla and mashed bananas. Mix well.

Meanwhile, melt coconut ghee and chocolate using a double boiler.

Add the melted chocolate mix to the banana bread batter and stir through.

Spoon into the loaf tin and arrange additional squares of chocolate on top (optional).

Bake for about 40 minutes.

Allow to cool, serve and enjoy.

Serves 10.
