Ingredients

Pancake Batter

1 ripe banana

3 eggs

¼ tsp aluminium free baking powder

2 tablespoons of raw cacao powder

¼ cup Niulife Coconut Flour

2 tablespoons of refined sugar free mini chocolate chips plus extra to sprinkle

Chocolate Hazelnut Sauce

2 tablespoons of organic butter

1 tablespoon of hazelnut butter

1 tablespoon maple syrup

2 tablespoons of raw cacao powder

For the pancake batter blend all the ingredients except the chocolate chips until it’s a smooth batter, then stir in the chocolate chips.

Heat a skillet with a little butter over low to medium heat. You can use egg rings or do it freehand (about 2-3 tablespoons of batter per pancake) Flip them after 1-1 ½ minutes so they are cooked on both sides.

For the Chocolate Hazelnut Sauce, melt the butter, stir in the hazelnut butter, maple syrup and cacao powder, mix until you get a smooth luscious sauce.

Pour over a stack of pancakes, (or over individual ones), add a good sprinkling of mini chocolate chips and serve with fresh strawberries on the side.
