Coconut Almond Fudge

The easiest fudge recipe packed with healthy super fats. Only 6 ingredients, and less than 5 minutes to prep. The perfect little healthy bite to have on hand when the sweet cravings hit.  

Ingredients

4 cups  Niulife Organic Coconut Flakes

1/4 cup  Niulife Coconut Ghee

3 tbsp almond butter

1 tsp vanilla essence

1 tsp salt

1/4 cup  Niulife Coconut Syrup or honey

Method

Place the Coconut Flakes in a high-speed blender, blend until the coconut becomes a paste-like texture (this will take a few minutes). You may need to add a splash of water.

Add Vegan Coconut Ghee, almond butter, vanilla and salt, blend for a further minute or so.

Add the Coconut Syrup or honey and mix until all ingredients are well combined.

Transfer to a greased and lined spring form cake tin, use the back of a spoon to spread evenly.

Refrigerate for 3-4 hours.

Gently remove from the pan and cut into approx. 20 small bite size squares.

Store in an air-tight container and keep in the fridge.
