Coconut Flour Gingerbread Cookies

These vegan & gluten free gingerbread cookies are right for the season.

Ingredients:

1 cup of Niulife Organic Coconut Flour

1/2 cup of all-purpose gluten free flour

1/4 cup arrowroot

2 tsp ground ginger

1 tsp cinnamon

1/2 tsp black pepper

1/2 tsp sea salt

1/2 tsp baking powder

3-4 tbsp Niulife Organic Virgin Coconut Oil, melt if it's firm

1 egg, whisked

1/3 cup maple syrup

80 grams melted chocolate, to decorate

Method:

Preheat oven to 180 degrees C

Combine all dry ingredients in a mixing bowl.

Add coconut oil, egg and maple syrup. Mix well until the mixture sticks together in a ball.

Transfer dough to a baking sheet, sandwich with another baking sheet and roll to approx 1cm thick.

Using a cookie cutter, cut gingerbread men (or shape of choice) until you've used all the dough.

Arrange on a lined baking tray, and bake for 15 minutes or until lightly golden on the edges.

Drizzle with chocolate and enjoy.

Store in the fridge
