​Lemon & Coconut Bliss Balls

Lemon, coconut bliss balls, is there a better bliss ball combination? Nope! Today we are bringing you something sweet and coconut-y, but with a kick of lemon. Yum!

You will need:

  • 2 cups almond meal
  • ½ cup Niulife Desiccated Coconut
  • 1/3 cup Niulife Organic Coconut Oil, (or Niulife MCT Oil, that works just as well!)
  • 1/4 cup Niulife Organic Coconut Syrup
  • 2 teaspoons vanilla
  • 1 tablespoon chia seeds
  • Finely grated lemon zest
  • Juice of half a lemon

    How to make:

  • 1. Line a tray or anything flat and freezer friendly with baking paper.

    2. Place almond meal, coconut and lemon zest into a bowl and combine. Add lemon juice and vanilla and mix through. The mix will be slightly dry and crumbly. Don't worry! Next, warm coconut syrup in a pan but don't boil. The aim is to make it nice and runny.

    3. Add the coconut syrup to your lemony mixture and combine. Next, adding in the coconut oil to the warm coconut syrup will slightly melt this, making it easy to mix.

    4. Scoop out heaped tablespoons of mixture, form the batter into balls and place onto your previously lined tray.

    5. Roll balls in extra desiccated coconut and refrigerate for 30 minutes or enjoy right away! These delicious morsels can be stored in an airtight container in the fridge for up to a week, or in the freezer for up to 3 weeks.
