Vegan Lentil Nachos

OK everybody, get your Ayoyotes on, make music, and Nachos!!!

If nothing else, the kids will love seeing their Mamma rattling these musical instruments on your ankles and wrists. 

If you don't own Ayoytoes, baby rattles will suffice ;-)

Ingredients:

1 tbsp olive oil

1 red onion, finely chopped

400 grams tinned black beans, drained and rinsed

400 grams tinned brown lentils, drained and rinsed

3 tbsp tomato paste

2 tsp taco seasoning

2 tbsp Niulife Organic Extra Thick BBQ Coconut Amino Sauce

1 tsp sea salt

1 tsp chilli flakes (add to taste)

300 grams corn chips

¼ cup tomato salsa

¼ cup chopped parsley

Vegan cheese, optional

Method:

1. Sauté onions in olive oil for 5 minutes.

2. Add black beans and lentils, cook for a further 10 minutes.

3. Add tomato paste, taco seasoning, Niulife Organic Extra Thick BBQ Coconut Amino Sauce, salt and chilli flakes. Mix and cook for a further 5 minutes.

4. Place corn chips in a shallow bowl. Top with lentil mince, tomato salsa, parsley and vegan cheese.

5. Optional: serve with extra Niulife Organic Extra Thick BBQ Coconut Amino Sauce.
