Vegan Orange Almond Cookies

Creamy crumbly bite sized goodness that’s perfect with a cuppa. Their texture is like a good shortbread. Oh, and while I make them bite size to exercise restraint, I rarely stop at one. 

Ingredients:

1 ½ cups of almond meal

4 tablespoons of melted Niulife Vegan Coconut Ghee

Zest of an orange

1 tablespoon of Niulife Organic Coconut Syrup

1 teaspoon of vanilla extract

2 teaspoons of poppy seeds

Method:

Preheat the oven at 150°C

Line a large cookie tray with baking paper

Combine all the dry ingredients in a bowl, then add all the wet ingredients, and mix well until a dough is formed. Roll into bite size balls, makes 12-18, then gently press down slightly with a back of a fork.

Bake for 10-15 minutes or until golden brown. Cool completely on the tray. Now go put the kettle on. Enjoy!

These keep very well in an airtight container.
