DIY Muesli Bars

If you are looking for an easy snack to drop into your kid’s lunch box for the return to school or one you will enjoy yourself, then be sure to give these easy DIY muesli bars a try!

Ingredients

125ml Honey

3 cups of rolled oats

¼ cup of Coconut oil

½ cup of chopped dried fruits, apricots, cranberries, and sultanas are a great option.

½ cup (50g) Desiccated coconut

½ cup brown sugar

½ cup (125 grams) Fat reduced butter, (coconut butter or vegan butter as a vegan alternative) Note, if you are using the vegan alternative be sure to decrease your coconut oil by 1/2.

¼ Choc Chips (optional but yummy!)

Method

Preheat oven to 180°C (160°C fan-forced).

Combine butter and honey in a saucepan over medium heat, stirring for 2-3 minutes, bring to a boil as syrup thickens decrease the heat.

Add coconut oil to saucepan and continue to heat until all combined then remove from heat.

Combine all remaining ingredients in large heat proof bowl. Poor in headed mix from your saucepan and combine with a large spoon.

Prepare a oven proof tin with baking paper, evenly spread you mixture in the tin with a spatula.

Bake in oven for 15 minutes or until golden.

Cool and then refrigerate until well chilled and cut into slices (2cm x 5cm) your mixture should allow for around 20 bars!

Cooking notes

This recipe can be made allergy free and vegan by substituting the butter for a vegan alternative such as Niulife coconut butter or vegan butter alternative of your choice and making sure your oats are gluten free.

Once made store in a cool dry place in a tin or air tight container.
